Banana-Pineapple Pudding Dessert

I love this simple dessert.  I make it ahead of time in single serving containers and take it to work for lunch.  I think I got the original recipe from the American Diabetes Association.  It called for low-fat cool-whip and coconut, but I like it just as well without.

Makes 4 servings.

1 package Jello sugar free vanilla instant pudding mix (the 4 serving size)
2 cups lowfat or skim milk (I make mine with 1%)
1 banana, sliced
1 cup crushed pineapple (in 100% pineapple juice)
2 low fat graham crackers

Prepare pudding as directed and pour into four single-serving containers (1/2 cup in each).
Add a layer of banana slices on top of the pudding
Add 1/4 cup of pineapple on top of the bananas
Top with a half a graham cracker. (You can put the cracker in the container first, but I like mine on top).

Calories per serving: 178
Carbohydrates: 36.3g
Total Fat: 1.8g
Protein: 5.5g
Sodium: 361.6mg

Notes:
  • This is low calorie, but it is NOT low sodium.  There might be other instant pudding brands that are more suitable.
  • There are probably lower carb pineapple options, but I went with what's in my cupboard.

sounds  good to me  ,  but more  carbs  then I would   eat.......nice  treatlove  all of this

Yeah, I realized after I posted it that the carbs were pretty high.  That's something I'm not having to watch too closely yet.  Honestly, you can't go low carb, low protein AND low fat unless you plan on starving!

Funny thing is, I'm pretty sure I got this off of the American Diabetes Association website!  Maybe I used the wrong kind of pineapple?
