Yellow squash / Corn Casserole

Yellow Squash / Corn Casserole                        350 degree oven... 30 to 35 minutes
3 or 4 ears of fresh corn cut off cob or frozen corn ( fresh is best tasting)
2 to 4 small to med yellow squash. peeled , cut up and boiled till tender. Drain well and mash with 2 to 3 tablesp butter or marg
Salt and pepper and mix fresh corn into mashed squash
Add 2 or 3 large chunks Velveeta cheese.
Pour into buttered casserole or 9x9 baking pan.
Bake 15 to 20 minutes , stirring occasionally as the cheese melts.
While baking, crush Ritz crackers and mix with softened butter.
When well mixed,  place on top of casserole and finish baking-- about 15 minutes more.
