Zucchini / Blackberry Cake

2 cups sugar
3 eggs
1 t. salt
1 t. baking soda
2 cups flour
3 t. cinnamon
2 cups of raw shredded zucchini ( I put mine on a paper towel and used one on top to take out extra moisture)
1 cup nuts (optional)
3 t. vanilla
1/2 t. baking powder
1 cup oil
1 1/2 to 2 cups of blackberries... Blueberries may also be used.

Blend oil and sugar
add eggs and zucchini
sift dry ingredients together and add to sugar mixture.
mix well
Mix in nuts and  vanilla
put berries in a bowl and sprinkle with flour and coat as well as possible before folding into the batter. This will keep them from  settling to the bottom of the pan.
 May be baked in 9x13 pan .( I used an 8x8 plus two small loaf pans. I like to stick some in freezer and share some.)   
  It may also be baked in 2 loaf pans.
Bake in 300 oven for 1 hour. If made in small pan check after about 50 mins .
    Make a powdered sugar glaze and ice while warm (optional)
