Berry Apple Fantasy Pie
« on: April 09, 2016, 06:43:34 PM »
I have made so many of these and they always disappear . Sent BB the recipe and she said they all love it too.
Pastry for double crust pie  ( I make mine in square baking dish )
1 cup sugar
4 teasp quick-cooking tapioca
1/2 teasp ground cinnamon
2 cups fresh blackberries ( I use frozen ones sometimes)
2 cups peeled, sliced apples
2 tablespoons butter or margarine-- cut up

Use frozen crust or home made. Place bottom crust into pie plate or baking dish.
In large mixing bowl, stir together the sugar, tapioca and cinnamon. Add the blackberries and sliced apples and toss gently till coated. Let stand 15 minutes.
Spoon filling into crust lined pan ; dot with butter,
Place the top crust over the filling. Cut slits for venting and crimp both crusts together.
Rub milk on top crust and sprinkle lightly with sugar before baking. (OPTIONAL)
Place foil over edges of crust to keep from burning.
Bake in 375 degree oven  for 25 minutes. Remove the foil and bake for another 20 to 25 minutes more or till the crust is golden brown and filling is bubbly . Cool  and enjoy !
