1 unbaked 9" pie crust
Filling:
1 1/4 cups sugar
1/8 tsp salt
3 T flour
2 eggs, beaten
4 cups rhubarb, cut into small pieces
Topping:
1/2 cup flour
1/2 cup cold butter
pinch of salt
Preheat the oven to 350 deg.
Stir together the dry ingredients for the filling. Stir in the eggs then add the rhubarb. Mix together and pour into the pie shell.
Topping:
Mix flour and sugar together then cut in the cold butter until crumbly. Sprinkle this over the filling.
Bake for 1 hour.
